What’s Up With All The Meat?

Alright, so if you have been around my site you probably have already noticed that I lOVE meat! What can I say, I am a meat and potatoes kind of gal. Grew up in the farmland and it is what I know…so why not!

So what’s up with this organic vegetarian taco recipe you ask?

I do have to admit, I do get tired of meat from time to time! That is pretty big for me to admit, so I am going to say it again: I do get tired of meat from time to time! Do you?

So today I set out to make a delicious meatless dinner and Oh my…JACKPOT!!…I mean really, this organic vegetarian taco recipe is absolutely fantastic!

How To Get Protein Without Meat

So protein is a big part of my macronutrients when creating the perfect plate. So how do I get my protein in when I am going meatless? Several ways.

  • You can add beans for a quality source of protein (soaked beans are best)
  • Organically sprouted corn tortillas are a good source of protein.
  • Cheese also has a great source of protein, so add a bit of cheese to your tacos.
  • Add some more healthy fat to your meal to compensate for the lack of protein. I added some sour cream and avocado.

With those two adjustments, you should be rockin’ this meatless meal!

Quality Ingredients Matter

We are in the summer months here in Wisconsin and everything is fresh and taste AMAZING! But there are a few things I’d like to caution you with.

  • Choose organic GMO-free corn tortillas ~ my favorite brand is Food For Life Organic Sprouted Corn Tortillas
  • Choose GMO-free corn for the salsa. If you can’t find it fresh, check in the freezer section in the organic section. Remember if it is organic, it is GMO-Free.
  • Choose organic produce ~ not only do they taste better, they are better for you!
  • If you like your salsa spicy (Oh I so do), add the seeds from the jalepeno! Trust me…it will kick it up a notch or two!
  • Make sure you dice up your red onion very finely. Red onion can overpower quickly. Mince it and the flavor will be milder. If you want an even more mild flavor, soak the chopped onions in water for 10 minutes before adding it to the salsa.
  • Try growing your own lettuce and cilantro. It is so easy and is very cost efficient. Both can be grown in containers.
  • A kick of lime goes a long way to adding flavor. Don’t skimp on this flavor!

So once you make your salsa, and there will most likely have some left over, simply add it to the corn tortillas. I like to put some more cilantro fresh from out of my garden and some delicious fresh lettuce.

Don’t forget to add a squeeze of fresh lime… it makes all the difference!

Add Your Favorite Toppings

As with any taco night, make your tacos your own. Do this by adding your favorite toppings! I added some sour cream, chopped avocado, and some fresh lime. You could also add some cheese. Yum!

A Delicious Organic Vegetarian Taco Recipe!

Ingredients

  • 45 fresh medium tomatoes, chopped
  • 1 jalepeno, finely diced (add seeds if you want some heat)
  • 2 tbsp minced or finely diced red onion. (add more if you love onions)
  • 1 ear of non-GMO corn or 1 1/2 cup gmo free frozen corn, thawed. You can also use 1 can of organic corn.
  • 1 14 1/2 oz can of black beans or 1 1/2 cup cooked and soaked black beans
  • 1/2 cup fresh cilantro chopped
  • 1/2 tsp of garlic powder
  • 1 tsp sea salt
  • 1 tbsp olive oil
  • 3 tbsp of fresh lime juice (about 1 large lime)
  • organic corn tortillas
  • toppings of choice

Instructions

  1. Mix together all the ingredients (except the corn tortillas and toppings of choice) and allow to marinate for several hours.
  2. Place a generous amount of salsa onto sprouted corn tortillas.
  3. Top with fresh avocado and fresh sour cream.
  4. Add toppings of choice. I like to add some more cilantro and some lettuce.
