This potato goulash recipe is anincredibly hearty and flavourful dinner. The unqiue blend of spices makes for a satisfying and budget friendly meal for the whole family. You can use any type of potatoes you like and have a delicious dinner ready in less than 30 minutes.

A few weeks back someone on Facebook asked if I could create a traditional dish from my hometown. Of course I just HAD to create this one - a gorgeously fragranced and lightly spiced Potato Goulash.

It reminds me of my childhood - myDad is such a great cook and this just brings back such happy memories.

It's loved by many Czech people, not just because it’s super tasty but it’s also really filling, relatively cheap and tastes amazing as leftovers!

About This Potato Goulash Recipe

This is the easiest, filling potato recipe! It takes minimal hands-on time, and only requires a few ingredients and spices to create a wonderful meal. It is naturally vegan and gluten-free too.

This Czech potato goulash saves well in the fridge and can travel well too - making it a great take to work lunch.

What is goulash made of?

Traditional goulash is made withbeef or pork, onions, peppers, and served with dumplings or mashed potatoes.

Potatoes were used as a substitute for meat if money was tight. But as someone who follows a plant-based diet, this vegan goulash recipe is a winner for me!

Ingredients for Vegan Goulash with Potatoes

For this recipe, you'll need the following ingredients (exact quantities in recipe card):

  • Potatoes - You'll need a good 6 -7 potatoes (around 700g). You can use new potatoes, salad potatoes or any other potatoes apart from sweet potatoes. They don't work that well.
  • Onions - Use a big white onion finely diced.
  • Sweet and Smoked Paprika - You can use these up to your taste. Start with 1 teaspoon of each and if the flavours are not strong enough add a touch more.
  • Ground Cumin, Dried Marjoram - Without these 2 this potato goulash would be boring. They bring all the flavours out and just make it delicious.
  • Tomato Puree - You'll need tomato puree, not chopped tomatoes or passata. It has to be puree which has more stronger tomato flavour.
  • Vegetable Stock - Helps to add more flavour and to cook the potatoes to perfection.
  • Nutritional Yeast - This is optional, but if you can don't omit it. It adds a slightly cheesy flavour and helps the goulash to thicken a bit too.

How to Make This Goulash Recipe with Potatoes

STEP 1: Start by peeling and chopping the potatoes into smaller chunks

STEP 2: Next heat a teaspoon of oil in a big pan and throw in the finely chopped onion. Fry until slightly golden.

STEP 3: Next add in the potatoes and fry for another minute or so.

STEP 4: Now stir in all the spices excluding the dried marjoram and fry for another minute

STEP 5: Pour in the vegetable stock, pop the lid on and simmer on a low heat for 10 minutes or until the potatoes are soft

STEP 6: Add in the tomato puree, mix well and let it simmer for a couple of minutes.

STEP 7: Taste and adjust seasoning with salt and pepper to perfection. Add the nutritional yeast, marjoram, mix well and serve immediately with chopped parsley, or/and chilli flakes.

What do you serve with goulash?

I usually serve this potato goulash on its own or with a side of greens such as rocket, or fresh spinach, but you could serve it with some crusty bread, brown rice, or even brown pasta if you need it really filling.

Tips for Making this Vegan Goulash with Potatoes

Specialty Ingredients - All spices can normally be bought in your usual grocery store.

Recommended Tools - Just a large pot or a pan.

Storing Tips - This potato goulash can be saved in the fridge for up to 4 days. Reheat with a tablespoon or two of water if it seems too thick.

Freezing Tips - Freeze for up to a month in an airtight container. To serve let thaw in the fridge overnight or heat up in the microwave straight from frozen.

  • 6 - 7 potatoes (approx.700g)
  • 1 onion, peeled and finely chopped
  • 2 tablespoon tomato puree
  • 2 tablespoon nutritional yeast (it works without it too)
  • 1 litre vegetable stock
  • 1 teaspoon sweet paprika
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 tablespoon dried marjoram
  • 1 teaspoon olive oil for frying
  • Salt and pepper to taste
