Easy To Batch Cut IntoTreatSize Portions

I cut my batch into 12 portions thinking they would be handy cereal bar size. Alternatively cut them into 24 bite-size pieces, perfect for kiddies party food, or for akidslunch timesnack.

Having a teenager with type 1 diabetes who LOVES chocolate is not a winning combination! It’s difficult to find chocolatesnacksthat are lower in carbs. However in small portions these offer that chocolate fix teenagers want without overloading on carbs. Ok no carbs is always better, but find me a diabetic teen that doesn’t try to sneaktreatsin?

Anyhow I digress, family sweettreatsare all about moderation and knowing what you are eating so you can make and informed choice. And giving our boys options about what they eat works for us. I find denyingtreatsat all created that irrational desire to have what you can’t have.

How to make low-fat and low-carbPopcorn Rocky RoadCandy Bars.

First Decide On How Much Chocolate You Want To Use? Yes, You Have A Choice!

I used 100g to keep the chocolate, fatcalorieand carb levels lower, thus a healthier familytreat.

Alternativly you can use 200g and go all out on the chocolate, this makes the bars a lot more solid. However with this in mind and to keep my bars solid but lower in chocolate I ensured I fully mixed and compressed the mixture before it went into thefridgewhich worked well.

Ingredients

  • 60gmini marshmallows
  • 75g Special K or bran crushed down a little ( but not too much)
  • 4tbspgolden syrup
  • 100g milk ordark chocolate
  • 50g sweet andsaltpopcorn
  • 1 sheet of grease proof paper

Method,Popcorn Rocky RoadCandy Bars

  1. Measure the popcorn, special k and 90% of the marshmallows into a bowl andstirtogether well (Leave extra marshmallows to one side for later)
  2. Add thegolden syrupand coat all of the mixture (This takes a bit of doing, be persistent)
  3. Line a medium glass dish with greaseproof paper ensuring you leave enough to cover the top of the mixture when the bowl is filled
  4. Put 2 squares of the chocolate to one side andmeltthe rest of the chocolate in the microwave in amicrowave-safe bowl. Heating 30 seconds at a time until it is thoroughly melted, keep mixing throughout! Ormeltin apanif your prefer.
  5. Pourthe chocolate into thepopcorn mixture, mixing until all the the mix is covered.
  6. Transfer themarshmallow mixtureto your bowl ortinwithparchmentpaper, cover the top, simplyfoldthe grease proof paper back over the top and compress as much as possible.
  7. Sprinkle the remaining marshmallows and compress again.
  8. And no need tobakesimplypopin thefridgeto cool and set for 3 hours.
  9. Once set,melttheremaining chocolatein a plastic piping bag in the microwave for 30 seconds at a time until melted, once melted snip the end of the bag off anddrizzleover the top of yourRocky Road PopcornBarBiscuitsand return to thefridgeto set.
  10. Cut into 12 equal slices and serve
  11. If you would prefer bitesize pieces cut into 24 pieces and half the nutritional value per bar
  12. Allow 3 hours in thefridgeto set.

How To Keep The PopCorn Rocky Road Candy Bars

I kept mine in an airtight container in the fridge, they will keep for 5 days. However they never last that long in this house!

Recipe Variations For My Rocky Road Bars

These will not be low fat, however for an extra twist or flavour alternatives check out the below.

  • Add a drizzle of hot toffee or caramel over the top once cooled
  • Swap the chocolate for white chocolate
  • Add a table spoonful of shredded coconut
  • Add a handful of dried raspberry flakes
  • For a festive twist add a handful of cranberries and spoonful of cinnamon
  • Vanilla extract
  • Chocolate Chips
  • For a great party treat add smarties
  • Peanuts or walnuts would make a great addition
  • Or mini eggs for easter

Popcorn Rocky Road Bars

Low fat and low carb Rocky Road Popcorn Bars

Ingredients

  • 60g small marshmallows

  • 100g milk or dark chocolate
  • 50g sweet and salty popcorn
  • 1 sheet of grease proof paper

Instructions

  1. Measure the popcorn, special k and 90% of the marshmallows into a bowl and mix together well (Leave extra marshmallows to one side for later)
  2. Add the golden syrup and coat all of the mixture (This takes a bit of doing, be persistent)
  3. Line a medium glass dish with greaseproof paper ensuring you leave enough to cover the top of the mixture when the bowl is filled
  4. Put 2 squares of the chocolate to one side and melt the rest of the chocolate in the microwave, heat 30 seconds at a time until it is thoroughly melted, keep mixing throughout!
  5. Pour the chocolate into the popcorn mixture, mixing until all the the mix is covered.
  6. Transfer this to your bowl with grease proof paper, cover the top with the grease proof paper and compress as much as possible.
  7. Sprinkle the remaining marshmallows and compress again.
  8. Cool in the fridge to set for 3 hours.
  9. Once set, melt the remaining chocolate in a plastic piping bag in the microwave for 30 seconds at a time until melted, once melted snip the end of the bag off and drizzle over the top of your Rocky Road Popcorn Bar and return to the fridge to set
  10. Cut into 12 equal slices and serve
  11. If you would prefer bitesize pieces cut into 24 pieces and half the nutritional value per bar
