Rocky road fudge is one of the simplest, but yummiest of my no bake dessert recipes.

Don’t be confused by the “fudge” in the name of this recipe. Rocky road fudge really isn’t fudge at all. I’m not sure how it got the name, but what you get with just a few ingredients is easy deliciousness.

The ingredients in this no bake chocolate recipe are similar to rocky road ice cream – chocolate, peanuts and marshmallows. They are a great combination, whether you eat them as ice cream or in these easy squares.

This is one of those Eagle brand recipes that has been around for years, but it never gets boring. Everyone loves a square or two, or more, of this yummy treat.

Rocky road fudge is a perfect dessert recipe for the holidays. It is quick and easy to make and is a great addition to a dessert tray of wonderful holiday goodies. That said, I make this treat any time of the year.

Just 6 simple ingredients that start with a can of sweetened condensed milk. There are so many wonderful recipes around that use sweetened condensed milk. It is one of the best ingredients to use for an easy dessert recipe. Just mix it with a few other pantry staples and you have something fabulous in very little time.

In this recipe, chocolate chips are melted together with the sweetened condensed milk and margarine or butter. Then you add a bit of vanilla for great flavor and some peanuts. Stir it together, cool it a bit, then pour it over miniature marshmallows. That’s it!

The recipe calls for peanuts but doesn’t indicate whether to use salted or unsalted. I use unsalted peanuts and it works well. I think salted would be fine too if you want that little hit of saltiness in the squares. The peanuts that won’t work well are those that still have the skin on them. The skin really wouldn’t add great flavor or texture to the squares.

As soon as the ingredients are all mixed together, just scoop the whole mixture into a 9″ x 13″ pan that has been lined with waxed paper. The waxed paper (or parchment paper if you prefer) is important because it allows the squares to be easily removed from the pan later on.

Chill the rocky road fudge in the fridge, right in the pan, for a couple of hours to allow the chocolate to harden. That’s it! You’ve now got a full pan of rocky road treats.

Rocky Road Fudge

Rocky road fudge is an easy no bake dessert recipe that everyone will love. It's one of my favorite easy chocolate desserts.

Equipment

  • 13" x 9" baking pan

Ingredients

  • 2 cups semi-sweet chocolate chips
  • 1 can sweetened condensed milk
  • 2 tablespoons butter, or margarine
  • 2 teaspoons vanilla
  • 2 cups peanuts
  • 1 package miniature marshmallows, plain or multi-colored

Instructions

  • Melt the chips with the sweetened condensed milk and margarine over low heat in a pot or in the top of a double boiler. If you are using a pot rather than a double boiler, keep a very close eye on the chocolate to make sure it doesn't burn.

  • Once the chocolate is fully melted, stir to mix it well with the condensed milk mixture. Remove it from the heat and stir in the vanilla and nuts. Cool it all just until it is lukewarm but still warm enough to mix with the marshmallows in the next step.

  • Place the marshmallows in a large bowl. Pour the chocolate mixture over the marshmallows and mix it all together.

  • Spread the chocolate marshmallow mixture in a wax papered lined 9" x 13" pan.

  • Chill until it is firm, about 2 hours. Once it has cooled and firmed, you can cut the "fudge" into squares for serving.

Notes

Rocky road fudge, an easy no bake dessert recipe. (4) For those who have peanut allergies, use another nut. Chopped almonds, cashews, hazelnuts or Macadamia nuts would be delicious too.

The finished rocky road fudge recipe looks and tastes great just as it is, but if you want to make it even prettier and more decadent, decorate to your heart’s content. You can top the squares with filled chocolates, dried cranberries and a drizzle of more chocolate as in the image with the multicolored marshmallows. Use your imagination and create the sweet treats that work for you.

I am usually not that inspired myself and I just enjoy them as they are. I think they already look pretty, especially if you use the multi colored marshmallows.
